The Ufoods team is working on four major projects to build the university food system:


  • Creating a mapped listing of the small to mid-scale produce, dairy, and meat producers considered local to each university setting. Between summer 2016 and spring 2017 the team will identify these producers, find out their technical assistance needs and infrastructure status, connect them to training and funding resources, and provide a map for each university community on its area farmers. 


  • Creating visual “road maps” for how food supply chains work in each university setting. During the summer of 2016 the team will create a University Food System Guide for one of the six universities, to then be used as a model for development of the remaining five partner universities. The guides will identify food system elements on campus—dining halls, retail stores, campus gardens, food pantries, student groups.


  • Identifying specific and actionable recommendations to connect small and mid-scale farmers to university market opportunities; and to connect students and staff at universities to opportunities to experience local agriculture in their communities. 


  • Identifying means to optimize the supply chain networks for sourcing and distribution of local food in the university setting.
